When I was a girl, popcorn was my favorite salty treat. My sisters and brothers and I would make some for an afternoon snack, and sit around the bowl, and just eat it until it was gone. As an adult, I experience digestive issues when I eat popcorn, which is very sad. The good news is that this healthy and easy treat tastes Just Like Popcorn! It is crunchy, toasty, salty and yum! I first heard of this concept from Mel of Clothes Makes the Girl – see her recipe here. Later, a friend of mine made it with ghee, which just gave it more of a buttered popcorn flavor. Wow! Its amazing! 🙂 Please don’t try it with finely shredded coconut! It just isn’t the same… Measurements are somewhat estimated – it just doesn’t have to be exact.
Enough large flake unsweetened coconut to cover the bottom of the pan
~OR~ 1 -12 oz bag of Bob’s Red Mill Flaked Unsweetened Coconut
A few Tbs. of melted ghee (clarified butter) I’m sure you could sub coconut oil here…
Sea Salt
1. Pre-heat oven to 350.
2. Mix ingredients on your sheet tray.
3. Bake until desired toastyness. It doesn’t take long! Be sure to watch it. 🙂
21 Day Sugar Detox update: I am on Day 11 and feeling great! I think this cleanse is helping my husband just as much as it is helping me. What I miss most is my Plantain Pizza/Wraps. It will come eventually! 🙂
