This is one of my favorite soup recipes – Sooo quick and easy! And absolutely amazingly delicious. Especially when you use your own canned tomatoes. (That being said, its good to note that tomatoes are not good for people with joint pain.) The brilliance of this recipe is that the mild natural sweetness of the coconut milk helps neutralize the acidity in the tomatoes – plus it doesn’t curdle like milk generally does. Feel free to omit the sausage, it’s just fine without it.
2 Tbs. Coconut oil
1 cup onion, chopped
4 cloves garlic, minced
1 pound bulk sausage, optional (see this recipe if you want to make homemade sausage)
1 (28 oz) can organic tomato sauce
1 (28 oz) can organic chopped tomatoes
1 can full fat coconut milk
Fresh or dried basil
Salt and Pepper to taste
*either of the cans of tomato can be subbed for an equal portion of chicken broth – depending on what you are looking for or what you have on hand.
Heat coconut oil in a soup pot. Stir in chopped onions and begin to caramelize. Watch and stir for a few minutes until it starts to get golden brown. Add garlic and continue until that starts to get brown, but not burnt. Add the sausage and sautee until the sausage is cooked. Add the tomatoes/broth, coconut milk, and the basil, salt and pepper to taste. Let it simmer for a few minutes, then enjoy! :)
