This recipe can be made with any of my cookie doughs – or even one of your own recipes!  Just spread it out on a parchment lined sheet pan to bake, whip some coconut cream, and arrange some fruit.  Yummy, beautiful, simple!  Below are some ideas of fun combinations.


Lemon or Orange Crust (Just sub orange for the lemon here)
Chocolate Crust
Chocolate Chip Crust

1. Make the dough according to directions.  Spread on a parchment lined cookie sheet.  If your cookie dough is thick, just press it out with your fingers.  (This is the Lemon Crust.)


2. Bake at 350 degrees until lightly browned – about 10-15 minutes.  Let cool.  Refrigerate until Cold.


Prepare Whipped Coconut Cream, feel free to use the chocolate variety!
Berries or fruit of your choice (Organic preferred)

1. Spread whipped coconut cream over the Cold crust.

2. Arrange berries or fruit, however you wish, and serve! 🙂

007This one is made with fresh kiwi, blueberries and black raspberries!  Tomorrow I will make one for the Fourth of July with Strawberries and Blueberries!  🙂

003I trimmed it square and made it into a flag.  I think I prefer the randomly dropped fruit over the flag decor, but it will make a nice centerpiece for our table! 🙂  Happy Independence Day! 🙂
