It is so easy to season your sausage without using junk ingredients – and it is so yummy!  Its amazing how delicious and simple the following three combinations are.

1 pound of ground pork, beef, turkey, or chicken
a combination of any of the following spices:

Option 1:
1 tsp. Sea Salt
1 tsp. Ground Fennel (note that Fennel is a seed spice and might cause issues on the AIP Protocol)
1 tsp. Granulated Garlic
1 tsp. Granulated Onion

Option 2:
1 tsp. Sea Salt
1 tsp. dried thyme
1 tsp. Granulated Garlic
1 tsp. Granulated Onion

Option 3:
1 tsp. Sea Salt
2-3 tsp. Herbs de Provence
(Herbs de Provence is typically a combination of Savory, Rosemary, Lavender, Marjoram, Thyme and Oregano – but make sure your particular brand has no Fennel, if you are sensitive to that.)

1. Pre-heat oven to 400 degrees.  Mix the ground meat with your desired spice combination.

2. Form into little patties and bake on a parchment lined cookie sheet (with sides).

3. Bake about 20 minutes – it will depend on the size of your patties.  You could also pan fry your patties.

4. Easiest Method: You can also cook the ground meat in a skillet, and add the seasonings while you stir.  This will be loose sausage that can be used as a filling for Plantain Wraps.  🙂
